"Dreaming about this VEGAN CREAMY GARLIC SPINACH PASTA right now. One of my favorite pasta sauces for sure. I love making a bunch of it and keeping it in the fridge for the week. Happy Tuesday loves! Hope your week is off to a great start...still feeling like it’s Monday over here...anyone else? I had the best weekend and it’s been tough getting back into the groove today, but I’m slowly getting there 🙃 I’m working on some fall recipes today and getting pretty excited about pumpkin and apple season...oh and chili, all the chili. ingredients

  • 2 potatoes, peeled
  • 2/3 cup chopped onion
  • 2 cups full fat coconut milk
  • 2 cloves garlic
  • 2 tablespoons tahini
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 pound pasta, cooked according to package directions
  • 2 handfuls baby spinach

Method

  • Step 1

    Bring 3 cups water, potatoes and onion to a boil. Cook for 15 minutes, until soft. Transfer potatoes, onion and 1/4 cup cooking water to a blender. Add remaining ingredients and blend until smooth.

  • Step 2

    Pour into pan and heat up. Toss with pasta and spinach.
