Chocolate Cupcakes with Marshmallow Fluff Frosting

Ingredients

for the cupcakes

3 cups flour

2 cups sugar

1/2 cup unsweetened cocoa powder

1 tsp salt

2 tsp baking soda

2/3 cup vegetable oil

2 cups water

2 tbl white vinegar

2 tsp vanilla 

 

Method

Preheat oven to 350 degrees F (175 degrees C). Line 24 muffin cups with paper liners.

In a large bowl, mix together flour, 2 cups sugar, cocoa, 1 teaspoon salt and baking soda. Stir in oil, water, vinegar and vanilla until blended. Pour mixture into prepared muffin cups, filling each 2/3 full.

Bake in the preheated oven for 25 minutes. Allow to cool.

 

Marshmallow Meringue Frosting

4 Large Eggs, Room Temperature

1 cup sugar

Pinch of Creme of Tartar

3/4 tsp vanilla

 

In a heatproof bowl or double boiler set over a saucepan of simmering water. The water shouldn’t touch the bowl. Whisk eggs whites and sugar and creme of tartar until sugar has dissolved, about 3-4 minutes. Remove from heat and using a hand mixer or stand mixer with whisk attachment, beat at high speeds until stiff peaks have formed, about 6-8 minutes. Beat in vanilla. Transfer into piping bag fitted with a large round pastry tip and frost completely cooled cupcake. Use a kitchen torch to lightly brown the frosting.
