English Muffin with Baked Beans and Eggs

  • 1 English muffin, toasted
  • 1/3 cup baked beans
  • 1 teaspoon olive oil
  • 2 large eggs
  • 1-2 tablespoons Wesson Plant Butter
  • Sesame seeds (optional), for topping


  • Step 1

    Separate English muffin and place in toaster. Toast until golden brown and crispy.

  • Step 2

    In a small pot over medium-low heat, add beans and heat until warm and beginning to bubble.

  • Step 3

    Heat olive oil in a skillet over medium heat and crack two eggs. Cover with a lid and cook until whites are set, about 4-5 minutes.

  • Step 4

    Once the muffin is toasted, spread with Wesson Plant Butter. Top with warmed beans, cooked eggs, and sesame seeds if desired.
