Miso Roasted Japanese Sweet Potatoes with Parsley Yogurt Sauce

These Miso roasted Japanese sweet potatoes are plated on creamy parsley yogurt sauce and topped with a sesame almond brittle. They make a flavorful side or snack.

  • 3 japanese sweet potatoes
  • 1 teaspoon garlic powder
  • 1 tablespoon white miso
  • 1 tablespoon olive oil
  • 1/ 3 cup fresh mint leaves
  • sea salt & pepper to taste

Parsley Yogurt Sauce

  • 1/ 2 cup greek yogurt
  • 1 garlic clove
  • 1 cup parsley
  • Sea salt and pepper

Sesame Almond Brittle

  • 1/ 2 cup almonds
  • 1 tablespoon butter
  • 1 tablespoon honey
  • 1 tablespoon sesame seeds
  • sea salt


  • Step 1

    Preheat oven to 400 F In a small bowl whisk together white miso, garlic powder, olive oil, sea salt and pepper.

  • Step 2

    Slice sweet potatoes into thick wedges and mix together with miso sauce until well-coated.

  • Step 3

    Line a baking sheet with parchment paper and spread out the sweet potato wedges.

  • Step 4

    Roast for 25 minutes.

  • Step 5

    While sweet potatoes are roasting make the parsley yogurt sauce and almond sesame brittle. *see below*

  • Step 6

    To plate: spread yogurt mixture on the bottom of the serving plate, layer on the roasted sweet potatoes, and top with the sesame-almond brittle and fresh mint.
