ingredients
- 3 japanese sweet potatoes
- 1 teaspoon garlic powder
- 1 tablespoon white miso
- 1 tablespoon olive oil
- 1/3 cup fresh mint leaves
- sea salt & pepper to taste
Parsley Yogurt Sauce
ingredients
- 1/2 cup greek yogurt
- 1 garlic clove
- 1 cup parsley
- Sea salt and pepper
Sesame Almond Brittle
ingredients
- 1/2 cup almonds
- 1 tablespoon butter
- 1 tablespoon honey
- 1 tablespoon sesame seeds
- sea salt
Method
Step 1
Preheat oven to 400 F In a small bowl whisk together white miso, garlic powder, olive oil, sea salt and pepper.
Step 2
Slice sweet potatoes into thick wedges and mix together with miso sauce until well-coated.
Step 3
Line a baking sheet with parchment paper and spread out the sweet potato wedges.
Step 4
Roast for 25 minutes.
Step 5
While sweet potatoes are roasting make the parsley yogurt sauce and almond sesame brittle. *see below*
Step 6
To plate: spread yogurt mixture on the bottom of the serving plate, layer on the roasted sweet potatoes, and top with the sesame-almond brittle and fresh mint.
