Dinner, Good For A Crowd, Pork
These look amazing, and I love the addition of fennel - it must add a lingering sweetness that perfectly complements the savory treat!

RECIPE

1 tbsp olive oil
1 large fennel bulb, finely chopped
2 garlic cloves, crushed
1 kg pork sausage mince
2 cups of fresh breadcrumbs
4 sheets of puff pastry
1 egg, lightly whisked
1 tbsp fennel seeds
1 tbsp mixed sesame seeds

- Preheat oven to 200c. Line a large baking tray with baking paper.
- Heat oil in a frying pan over medium heat. Add fennel and garlic and cook, stirring, for 10 minutes until fennel softens. Remove from heat and set aside to cool.
- Combine fennel mixture, sausage mince and breadcrumbs in a bowl and season well with salt and freshly cracked black pepper.
- Place sausage mixture into a large piping bag. Pipe the sausage mixture down the edge of a pastry sheet. Roll to enclose and brush a little egg on the end to secure.
- Use a sharp knife to cut the roll into 2 cm lengths. Place on the lined baking tray. Continue with the remaining mince and pastry sheets. Brush with remaining egg and sprinkle with fennel seeds and sesame seeds. Place in fridge for 30 minutes to rest.
- Bake the sausage rolls for 15 minutes until puffed and golden and cooked through. Serve warm or at room temperature with spicy ketchup.
