For the Filling
- 2 1/2 cups blueberries
- 2 bananas, sliced
- 1 tablespoon coconut sugar
- 1/2 lemon, juiced

For the Crumble
- 1 cup ground almonds
- 1/2 cup plus 1 tablespoon rolled oats
- 1 tablespoon coconut oil
- 2 tablespoons maple syrup
Method
Step 1
Preheat oven to 400ºF. Add all filling ingredients to a bowl and set aside for about 20 minutes. Stir from time to time.
Step 2
In a bowl, mix coconut oil with maple sirup, then add ground almonds and oats, mix using your fingertips to make a breadcrumb-like texture.
Step 3
Pour the filling into a baking dish and evenly distribute the topping over the fruit. Bake for about 30 minutes or until topping color is golden brown. Serve warm and enjoy with whipped cream or vanilla ice cream.
