ingredients
- 12 tablepoons frozen peanut butter
- 1/2 softened butter
- 1/2 brown sugar
- 1/4 granulated sugar
- 1 egg
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cup all purpose flour
- 3/4 semi sweet chocolate chips
Method
Step 1
Lightly spray a 12 count muffin tin and preheat oven to 350F. Scoop peanut butter and stick in freezer for 10 minutes.
Step 2
While the peanut butter is freezing beat together butter and sugars until smooth and blended. Add in egg and beat until well blended.
Step 3
Add in dry ingredients and mix just until blended. Fold in chocolate chips.
Step 4
Scoop 1 tablespoon cookie dough into each muffin tin. Place 1 frozen scoop of peanut butter on top of cookie dough. Top with another 1 tablespoon scoop of cookie dough.
Step 5
Bake for 12 to 14 minutes or until golden brown in color. Allow to cool completely in muffin pan.
