Coffee Cake Muffins
ingredients
- 1/2 cup vegetable oil
- 1/4 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 cup milk
- 1/2 teaspoon (5 grams) salt
- 2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 2 cup all purpose flour
- 1 teaspoon cinnamon
Method
Step 1
Preheat oven to 375 degrees F. Spray a standard 12-count muffin tin with nonstick cooking spray.
Step 2
In a large bowl, combine all ingredients and whisk together just until blended together.
Step 3
Prepare the streusel: Combine all ingredients and using a fork or pastry knife, cut the ingredients together until mealy in texture.
Step 4
Scoop the batter into the muffin tins until 7/8 full. Top muffins with streusel topping and lightly press streusel into batter. Bake in preheated oven for 25 to 30 minutes, or until golden brown in color and a toothpick inserted into the center of the muffins comes out clean.
