ingredients

  • 1 tbsp avocado oil
  • 1 yellow onion, diced
  • 2 garlic cloves, minced
  • 4 cups gluten-free vegetable stock
  • 1 Jar Siete Green Enchilada Sauce
  • salt and pepper, to taste
  • 1 tbsp dried oregano
  • 1 cup coconut oil
  • 1 packet Siete Grain Cassava Tortillas

  • 1 avocado, peeled and diced
  • 1 cup shredded chicken
  • fresh cilantro
  • lime wedges

Method

  • Step 1

    Heat a medium-sized pot over medium heat.

  • Step 2

    Add avocado oil, onions, and garlic until translucent.

  • Step 3

    Add vegetable stock and jar of Siete Green Enchilada Sauce. Season with salt, pepper, and oregano.

  • Step 4

    Let the stock simmer for 15-20 minutes.

  • Step 5

    Heat a shallow pan with coconut oil.

  • Step 6

    Cut cassava tortillas into small squares and fry in small batches until golden and crispy.

  • Step 7

    Drain crispy tortillas on a pan lined with paper towels.

  • Step 8

    Serve broth with shredded chicken, diced avocado, and crispy tortillas.
