These Blueberry Cheesecake Buns are light airy and buttery. As if they couldn't get any better, they are piped with a creamy cheesecake filling in the center with juicy blueberries. Swap out with your favorite fruits.

ingredients

Dough recipe with Instant or Fresh Yeast

  • 360 grams Bread Flour
  • 2 egg yolks
  • 175 grams Milk
  • 45 grams Sugar
  • 10 grams Honey (or Sugar)
  • 45 grams Butter
  • 5 grams Instant Yeast / 10g Fresh Yeast

Sweet Stiff Starter

  • 30 grams Starter
  • 40 grams Water
  • 100 grams Flour
  • 10 grams Sugar

Main Dough

  • All of Sweet Stiff Starter
  • 250 grams Bread Flour
  • 2 egg yolks
  • 120 Milk
  • 45 grams Sugar
  • 4 grams Salt
  • 45 grams Butter

Method

  • Step 1

    Knead everything except butter until the dough is strong and fairly elastic

  • Step 2

    Add the butter in small cubes gradually and knead until window-pane stage.

  • Step 3

    Rest the dough until double.

  • Step 4

    Divide the dough into equal portions of your desired size (mine was 90g) and roll into smooth and tight balls. Cover and proof until double.

  • Step 5

    Oil the base of a small cup and push it down to compress the middle part of each dough ball.

  • Step 6

    Brush the surface of the buns with egg wash

  • Step 7

    Pipe the cream cheese in the middle of the dough

  • Step 8

    Add your favorite fruit on top of the cream cheese.

  • Step 9

    Bake in a preheated oven at 185C for 18-20min.

Cream Cheese Filling

  • 250 grams Cream Cheese
  • 50 grams Sugar
  • 15 grams Corn Flour/ All-Purpose Flour
  • 20 grams Milk
  • Zest of 1/2 Lemon
  • A pinch of salt (optional)

  • Step 1

    Mix everything together until smooth.
