  • 2 1/2 cups flour
  • 1 teaspoon salt
  • 2 1/4 teaspoons instant yeast
  • 1 cup water, at 120 degrees F
  • 3 tabelspoons olive oil
  • 1/2 thinly sliced onion
  • 2 teaspoons thyme
  • 1/4 cup grated parmesan
  • 1 teaspoon olive oil

Method

  • Step 1

    In a large bowl, whisk together the flour, salt, and yeast. Add the 120 degree F water and 2 tablespoons of olive oil. Stir to combine, and then knead on a floured surface for 5 minutes.

  • Step 2

    Place the dough in a large greased bowl covered with plastic wrap, and set in a warm place to rise for 1 hour.

  • Step 3

    While the dough is rising, start to make the topping. Place the thinly sliced onions into a pan, along with 1 teaspoons olive oil. Cook them on medium-low for 30 minutes- or until they turn a caramel color. Scoop the caramelized onions into a bowl and set aside.

  • Step 4

    Once your dough has finished rising, (it should double in size), preheat your oven to 400 degrees F . Grease a 10 in round cake pan, and flatten the dough into it. Use your fingers to press little holes throughout the dough.

  • Step 5

    Before baking, brush 1 tbsp of olive oil on top of the dough. Spread the caramelized onions on top of that - and then sprinkle on the thyme and the cheese. Place in the oven to bake for 25-30 min.

  • Step 6

    Once baked, let it cool in the pan for 10 minutes on a wire rack before removing it to cool the rest of the way. You can make a basic oil dip by combining your favorite herbs and spices with some olive oil. Enjoy!
