Honey Walnut Banana Bread

3/4 tsp baking soda

3/4 tsp baking powder

1/2 tsp salt

1 tsp pumpkin pie spice (or cinnamon)

1/4 tsp nutmeg

3/4 cup almond flour

1/4 cup coconut flour

3 tablespoons melted coconut oil

2 eggs

2 1/2 mashed ripe bananas

1/4 cup honey (or maple syrup)

1 tsp. vanilla

1/2 cup chopped walnuts


Preheat oven to 350˚F. Grease a 9 inch x 5 inch loaf pan with coconut oil (or spray), then line with parchment paper.

In a large bowl, combine dry ingredients. In a separate bowl, mix coconut oil, eggs, bananas, honey, and vanilla until combined. Add wet ingredients to the dry and gently mix together until combined.

Pour batter into prepared pan and bake for 45-50 minutes or until a toothpick comes out clean.
