Our editorial director @clarelangan made @saltnsprinkles Chickpea Chocolate Crunch Bars! Chickpeas are roasted until crispy and then folded into chocolate with a little coconut oil. That's it! The texture is similar to a crunchy candy bar. They're perfect to keep in the freezer when you need a little chocolate kick!

ingredients

  • 1 can chickpeas, rinsed and patted dry
  • 2 cups chocolate chips, or vegan chocolate
  • 1 teaspoon coconut oil

Method

  • Step 1

    Preheat oven to 400 F. Line a baking sheet with foil and coat with nonstick spray. Also, line a loaf pan with parchment paper and set aside.

  • Step 2

    Pour the chickpeas onto the baking sheet and give them a quick rub to remove any of the loose skins.

  • Step 3

    Roast for about 30 mins, until crunchy, cool on the tray for a few minutes.

  • Step 4

    Meanwhile, add your chocolate chips and coconut oil into a microwave-safe bowl and microwave at 30s intervals, stirring each time until fully melted.

  • Step 5

    Add the warm chickpeas into the bowl of chocolate and mix to coat.

  • Step 6

    Pour the chocolate chickpea mixture into the lined loaf pan and spread into an even layer. Freeze for about 2 hours until hard. Break apart and enjoy!
