Recipe Card


  • 3 eggs
  • 1 cup pumpkin puree
  • 2 ripe bananas, mashed
  • 1/2 cup greek yogurt
  • 1/2 cup olive oil
  • 1 teaspoon vanilla extract
  • 1 cup dark brown sugar
  • 2 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon salt


  • Step 1

    Preheat the oven to 350˚F. Spray a 9 by 5 inch loaf pan with nonstick cooking spray or coat with butter.

  • Step 2

    In a large bowl whisk together the eggs, pumpkin, mashed banana, yogurt, olive oil, brown sugar and vanilla extract. In a separate bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice, and salt . Fold the dry ingredients into the wet and mix just until combined.

  • Step 3

    Pour the batter into the prepared pan and bake for about 45 minutes. Let cool slightly before slicing.
