Roasted Cauliflower

ingredients

  • 1 medium head of cauliflower
  • 1 teaspoon salt
  • 4 tablespoons olive oil

Green Tahini Dressing

ingredients

  • Handful of parsley, cilantro and mint leaves
  • 2 garlic cloves
  • 1/4 cup unsalted tahini
  • 1/2 lemon, juiced
  • 1/2 teaspoon salt
  • 1/2 cup cold water

Roast the Cauliflower

Method

  • Step 1

    Preheat the oven to 430F / 220C.

  • Step 2

    Fill hot water in a pot, add 1 teaspoon of salt and boil the cauliflower.

  • Step 3

    Cook for around 10 minutes in the boiling water, depending on the size of the cauliflower, until it becomes soft but not too soft.

  • Step 4

    Drain the water and place the cauliflower on a baking dish.

  • Step 5

    Bake it for 20- 25 minutes until the top turns golden brown.

  • Step 6

    Transfer the cauliflower to a serving plate.

Make the Dressing

  • Step 1

    Put all the ingredients in a food processor and process it to a dressing texture.

Assemble

  • Step 1

    Drizzle the green tahini on top and add some chopped parsley or cilantro!
