Tofu Tacos With Spicy Chipotle Sauce

Serves 4


1 shallot, chopped

1 jalapeño, seeded and finely diced

1 green pepper, chopped

1 tbsp. vegan butter

1 tbsp. olive oil

½ tsp. cumin

½ tsp. coriander

1 block extra firm tofu, drained and crumbled

1 ½ tsp. turmeric

1/2 tsp. salt

1/2 tsp. pepper

Shredded vegan cheese, tortillas, salsa, limes, and any desired toppings


In a non-stick pan sauté the shallot, jalapeño, green pepper in the olive oil vegan and butter for a couple minutes. Next, add cumin and coriander and sauté for a little less than a minute. Add the tofu, turmeric, salt and pepper and sauté for another couple minutes. Place a spoonful of the scrambled tofu in your favorite corn tortilla (or flour if your heart desires), top with shredded vegan cheese, salsa and a healthy squeeze of lime juice. Easy peasy.
