For the Falafel
ingredients
- 1 teaspoon matcha green tea
- 1 cup spinach
- 1 can chickpeas (15 oz)
- 1 teaspoon minced garlic
- 1/2 teaspoon ground cumin
- 1/2 squeezed lemon
- Sea salt & pepper, to taste
- 3-4 tbsp oil
For the Salad
ingredients
- 1/2 cup baby spinach
- 1/2 cup cucumber slices
- 1/2 avocado
- 1/3 cup steamed shelled edamame
- 1/2 cup micro greens (optional)
- matcha dressing, homemade or store bought
Method
Step 1
Heat oil in a pan on the stove over medium heat. Combine all falafel ingredients in a food processor. Pulse until the mixture is crumbly. Form into small patties and cook on the heated pan for about 10 minutes (flipping halfway). Allow to cool on paper towel.
Step 2
To a serving bowl, add spinach, cucumber slices, avocado, edamame, microgreens, and homemade falafel. Top with matcha dressing.
