"Unbaked strawberry cheesecake because I hear it's Mother's Day in the UK this weekend! Recipe is on my blog (link in bio). I was MIA this week as I was recovering from the cold/flu/burn out/whatever and didn't wanna make food for anyone! I rested, slept, drunk lots of water and tried to eat up. The reality of self-employment is you can't delegate work and unnegotiable deadlines pile up. After some much needed rest, I'm almost back to work... and I've got so many new recipes to show you soon"

A Note from Feedfeed

This bright pink no-bake cheesecake is light, creamy, and vegan! Sweet gluten-free cookies are blitzed until fine and tossed with melted vegan butter. Once the crust is baked and cooled, it's layered with the creamy cheesecake filling made with vegan cream cheese, frozen strawberries, coconut cream, and beetroot powder. Chill this cheesecake until set, then finish it off with a thick strawberry jam glaze.
