These brownies are ooey, gooey and absolutely delicious! They're also gluten free and vegan, but you'd never know it.

ingredients

  • 1 cup coconut oil, melted
  • 1 3/4 cups coconut sugar
  • 2 cups chocolate chips
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon Kosher salt
  • 1 1/4 cups gluten free flour
  • 3/4 cup cocoa powder

Method

  • Step 1

    Preheat oven to 350°F. Line a brownie tin with parchment paper, set aside.

  • Step 2

    In a medium saucepan on low heat, gently melt together the coconut sugar, 1 cup of the chocolate chips and the coconut oil.

  • Step 3

    While that is melting, whisk the eggs and vanilla together in a large bowl. Then, stir in the salt, baking powder and cocoa. Pour in the melted chocolate, oil, sugar mix. Stir until smooth.

  • Step 4

    Add the flour and remaining chocolate chips, stir until just combined. Pour into the prepared brownie pan. Bake until the brownies are cooked on the top but still gooey in the middle, 25-27 minutes.

  • Step 5

    Let cool completely before cutting into them.
