Onion-Cheese Pie with Bacon – Swiss Tradition

ingredients
- 1 rolled out Puff Pastry 22 cm round
- 350 g Mix of Cheese for Fondue or salty Cheese Pie (Appenzeller, Gruyere, Vacherin)
- 150 g sharp Leister or Cheddar
- 150 g Bacon Bits
- 2 sliced Onion
- Paprika
- Pepper
- 1/2 teaspoon Sugar
- 1/2 teaspoon Chili Flakes
- Nutmeg
- 2 Eggs
- 1/2 bunch Parsley
Method
Step 1
Grease the pie dish and layer the puff pastry into it, by also pulling up the sides. Pinch the bottom with a fork and keep in the fridge until the cheese filling is done.
Step 2
Fry the bacon bits in a wide pan and add the onion slices. Sprinkle with the sugar. Season with salt and pepper. Let cook on small flame until the onion are soft, set aside to cool.
Step 3
Mix the grated cheese and add the grated Leister or Cheddar. Add nutmeg, chili flakes and the eggs and mix well.
Step 4
Add the cooled onion and bacon. Pour this onto the pastry and sprinkle with chopped parsley.
Step 5
Bake in the oven at 200 C for 35-45 minutes. You can serve the pie cold or warm, but fresh from the oven is best!
