Banana, Almond & Cardamom Pancakes

"Banana, almond and cardamom pancakes with a burnt orange reduction served with fresh fruit and a big dollop of greek yogurt. I love playing with whatever I have on hand when we wake up in the morning as there is almost always a great pancake hiding in every kitchen! As always I've just made these using my stick blender and as I was out of flour I've used almond meal☺️ Both girls demolished them in minutes. For Miss Harper (7 months) I just held back the decorative almond pieces. If cardamom isn't your thing just swap it for an extra tsp of cinnamon."

Banana Almond Cardamom Pancakes

Pancakes:

3 med bananas (was just under 1 1/2 cups)

3 eggs

1/2 cup almond meal

1 tsp baking powder

1 tsp cinnamon

1/2 tsp van essence

2 tsp ground cardamom

1 tbs milk.

Blend all ingredients together & Set aside for a few mins. Then cook in some coconut oil in a non stick pan. If not cooking for babies sprinkle with some chopped almonds right before flipping. Do a trial one and if it's a little two runny just add an extra tbs of almond meal, there will be some variation in banana size 

Burnt Orange Reduction:

2 Oranges, sliced

Juice of 5-6 oranges

Slice up two oranges and remove skin. Heat up a non stick pan till nice and hot. Sear the slices on one side till they get a little charred, flip them over briefly then remove from pan and set aside.

Using the same pan bring orange juice to a rolling boil. Reduce temp a little then stir regularly with a spatula till reduced by 1/2 or more if you want stickier.

Serve with fresh fruit and full cream Greek yogurt
