ingredients
- 3 small/medium ripe bananas
- 1/2 cup plant milk
- 1 tablespoon apple cider vinegar
- 1/4 cup coconut oil (or olive oil)
- 1/4 cup agave (or maple syrup)
- 1 teaspoon vanilla extract
- 1 3/4 cup whole wheat flour
- 1/4 cup cacao powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- pinch of salt
Method
Step 1
Preheat the oven to 180C. In a large mixing bowl, mash the bananas with a fork. Add plant milk, apple cider vinegar, oil, syrup and vanilla. Whisk to combine (you can use the same fork).
Step 2
Add all remaining (dry) ingredients and mix with a spoon only until you have an uniform batter (don't overmix).
Step 3
Transfer to a loaf pan lined with baking paper. If desired, decorate the surface with dark chocolate chips.
Step 4
Bake for 30-35 minutes, until it's nicely browned on top. Let cool for 10 minutes, after that time remove from the pan and let cool completely on a cooling rack.
