Sweet Potato and Egg Hash

  • 1 large sweet potato, peeled and diced
  • 2 large eggs, whisked
  • 1 tablespoon EPIC Grass-Fed Beef Tallow
  • Kosher salt and pepper, to taste
  • Fresh thyme, for garnish

Method

  • Step 1

    In a large pan, add in the beef tallow on medium heat, letting the tallow render down.

  • Step 2

    To the pan, add in the sweet potato, tossing it in the tallow to coat fully. Let the sweet potato cook and get soft, approximately 7-10 minutes.

  • Step 3

    Meanwhile, crack two eggs in a small bowl and whisk, then set aside. Once the sweet potatoes are fork tender, season with salt and pepper and push to the side of the pan.

  • Step 4

    Pour in the eggs, lower the flame to a medium-low, then using a spatula, mix the eggs together into a scramble.

  • Step 5

    Cook the eggs until desired doneness (I prefer a medium scramble - a little wet, fluffy, not too runny).

  • Step 6

    To plate, add a scoop of the sweet potato on a plate, then layer the scrambled eggs on top. Garnish with fresh thyme and serve.
