Crust

ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 cup almond meal
  • 1/2 cup powdered sugar
  • 6 1/3 ounces dairy free butter, cut into small pieces
  • 1/2 tablespoon cold almond milk
  • 1 teaspoon vanilla
  • pinch of salt

Filling

ingredients

  • 1 15 ounce can coconut whipping cream ⁣, chilled overnight
  • 14 ounces dairy free sweetened white chocolate (or cocoa butter combined with sweetener of choice to taste)

Strawberry Jam

ingredients

  • 10 1/2 ounces (about 1 1/4 cups) fresh strawberries, hulled
  • 1/2 cup water
  • 2-3 tablespoons maple syrup
  • 1 1/2 teaspoons agar-agar powder

Crust

Method

  • Step 1

    Preheat oven to 180ºC (350ºF). Grease a tart pan (8” deep Quiche and Tart Pan).

  • Step 2

    In a food processor, add the crust ingredients ⁣and pulse until combined and dough ball forms. Roll out dough, then place gently into tart pan. Firmly press mixture into the tart pan with your hands, press into bottom and up the sides of tart pan (chill the dough if it gets too warm).

  • Step 3

    Bake for 20 minutes or until crust is golden brown. Allow tart to cool in pan.⁣

Strawberry Jam

  • Step 1

    Add the berries, water & maple syrup into a saucepan. Cook over medium heat. Mash the berries as they begin to heat up.

  • Step 2

    Add agar agar powder and cook until dissolved and the mixture thickens to a sauce-like consistency.

  • Step 3

    Remove from heat. Pour berry compote over the tart and chill in fridge until set. ⁣

White Chocolate Ganache ⁣

  • Step 1

    Open chilled coconut whipping cream and scoop off the cream into a microwave-safe bowl. The cream will be very thick and should easily scoop off from the top. Microwave on high for 1 minute or until hot but not boiling.

  • Step 2

    Remove from the heat, add the white chocolate and whisk until combined and smooth.

  • Step 3

    Pour the ganache over the set strawberry jam and refrigerate overnight. ⁣
