A Note from Feedfeed

This spring salad is loaded with fresh veggies from crisp radishes, blueberries to creamy avocado. Serve this as a main or side.

ingredients

  • 2 medium avocados
  • 1/2 cup unsweetened cashew milk
  • Juice from 1/2 lemon
  • 2 cloves of garlic
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley or use a handful of fresh parsley
  • 1 teaspoon Dijon mustard
  • 1 teaspoon hemp seeds
  • 1 teaspoon maple syrup or 3 mejdool dates pitted
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon Himalayan pink salt or kosher salt

Method

  • Step 1

    Place all the ingredients in the high speed blender and blend until smooth. Store the ranch dressing in an air tight glass jar in the fridge for up to 4 days.

  • Step 2

    For the salad I used 1 bag of organic arugula, 6 radishes thinly sliced, 2 small Persian cucumbers thinly sliced, handful of pepitas, handful of blueberries and some chopped dill.
