"This is my mum's vegan Sri Lankan aubergine curry just in time for #meatlessmonday. It's a super traditional recipe that my mum and grandma only made on special occasions, but nowadays I cook it for my vegetarian and vegan friends and they're blown away. It's not your average curry, it's got so many flavours in it that your average curry mix just hasn't. This is the kind of curry your mum teaches you, not a book. But it's one of my all time favourites so I think it's worth sharing. It's creamy thanks to the coconut milky, perfectly tangy from the tamarind and delicately spicy thanks to the fenugreek and curry leaves. "
