"Friends, let me introduce you to the smoothest/creamiest vegan cheese with sensational flavor from @vevan.foods and thank you @thefeedfeed for the opportunity to develop a recipe for the website! #ad I'll be the first one to admit I'm hesitant to supplement vegan cheese for the real thing especially being from the Midwest, however upon trying Vevan Ched-Melts and the Vevan P'Jack-Melts my husband and I were blown away by the authentic texture! However, I had to put it through one more test and that was to see its melting capabilities...... Since summertime is approaching I decided to create a BBQ Pulled Chicken sandwich with layers of pineapple and Vevan P'Jack-Meltss giving the perfect kick and finally garnished with pickled onions! ingredients

  • 2 pounds chicken breast
  • 1 1/2 teaspoons salt
  • 1 teaspoon garam masala
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground mustard
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • 1 tablespoon olive oil
  • 1 onion, thinly sliced
  • 1/2 cup chicken broth
  • 1 cup pineapple, diced
  • 1/2 cup BBQ sauce
  • dash of Worcestershire sauce
  • 6 hamburger buns
  • 12 slices Vevan P'Jack-Melts
  • pickled onions, for serving

Method

  • Step 1

    Clean and pat dry chicken. Make the spice rub by mixing the salt and spices together. Rub onto the chicken. Set aside.

  • Step 2

    Add olive oil to an electric pressure cooker (such as an Instant Pot) set to the Sauté function. Brown the chicken for 2 to 3 minutes on each side. Remove and set aside. Add onions and cook until brown, about 3-5 minutes. Deglaze pan with broth, using a wooden spoon to scrape the bottom of the pan. Add pineapple, BBQ sauce and Worcestershire sauce.

  • Step 3

    Add chicken back to pot, secure lid and pressure cook for 20 minutes. Manually release the valve. Remove chicken and shred. Add back to the sauce and simmer for 5 minutes over low heat.

  • Step 4

    Preheat broiler. Line a baking sheet with aluminum foil. Put 1 slice of P’jack-Melts onto the bottom of each burger bun, add the chicken, then top with another slice of Vevan P'Jack-Melts. Broil for 1-2 minutes. Top each sandwich with pickled onions before topping with the top burger bun.
