  • 1 cup diced white onion
  • 1 cup diced celery
  • 1 cup diced carrots
  • 1 teaspoon kosher salt
  • 3 cloves garlic, minced
  • 1 1/2 pounds skinless, boneless chicken thighs, cut into thirds
  • 1 teaspoon garlic salt
  • 1 teaspoon Italian seasoning
  • 1 (28 ounce) can Muir Glen Fire Roasted Crushed Tomatoes
  • 2 (14.5 ounce) cans garbanzo beans, drained and rinsed
  • Fresh lemon juice (optional), for serving
  • Fresh chopped parsley, for topping

Method

  • Step 1

    Dice the vegetables, mince the garlic, and cut the chicken thighs into thirds. Drain and rinse the garbanzo beans.

  • Step 2

    In a large skillet over medium heat, heat the olive oil. Add the diced onions, carrots, and celery, seasoning with sea salt. Cook, stirring occasionally, until the vegetables are soft, about 4–5 minutes. Add the minced garlic to the skillet and toss with the vegetables, then transfer the mixture to the slow cooker.

  • Step 3

    Layer the cut chicken thighs on top of the mirepoix in the slow cooker. Sprinkle with garlic salt and Italian seasoning. Pour the Muir Glen Fire Roasted Crushed Tomatoes and the drained garbanzo beans over the chicken, ensuring the chicken is completely covered.

  • Step 4

    Cover the slow cooker and cook on low for 4–5 hours, or until the chicken reaches an internal temperature of 175°F (chicken is safe to eat at 165°F, but will have a better texture at 175°F).

    If desired, shred the chicken slightly with forks and taste the stew. Adjust seasoning with sea salt and pepper as needed.
