Baked Sweet Potato With Avocado Cream

ingredients (2 servings):
- 2 large sweet potatoes
- 2 tbsp. olive oil
- 1 avocado
- 1 small garlic glove
- 2 tbsp. greek yogurt
- 1 tbsp. fresh lime juice
- chili flakes
- salt
- pepper
- mixed salad greens
- cherry tomatoes
method:
1. Preheat oven to 200° C
2. Wash sweet potatoes thoroughly.
3. Drizzle them with 1 tbsp. olive oil and wrap in aluminium foil.
4. Bake for about 45-55 minutes.
5. Meanwhile, chop the garlic finely and mash avocado with a fork.
6. Mix together chopped garlic, mashed avocado, yogurt and lime juice.
7. Season to taste with salt and pepper.
8. Cut cherry tomatoes to quarter and wash salad greens.
9. Split sweet potatoes and top with the avocado cream and 2-3 cherry tomatoes, sprinkle with chili flakes and serve with salad greens.
