Masala Hash with Waffle Cut Sweet Potato Fries
ingredients
- 1 bag Alexia Waffle Cut Sweet Potato Seasoned Fries
- 1 bag frozen fajita vegetables (peppers and onions)
- 1-2 teaspoon garam masala
Masala Ketchup Eggs
ingredients
- 4-6 large eggs
- 1 tablespoon ketchup, per egg
- 1/2 teaspoon garam masala
- Neutral oil, for frying
- Pinch of salt (optional)
- Fresh cilantro, to garnish (optional)
Lime Crema
ingredients
- 1/4 cup Greek yogurt
- 1/4 cup sour cream
- 1/2 lime, zested and juiced
- 1 clove of garlic, grated
- Kosher salt, to taste
To make the Masala Hash with Waffle Cut Sweet Potato Fries:
Method
Step 1
Preheat oven to 425 degrees F.
Step 2
Mix together frozen waffle fries, frozen peppers and onions, and garam masala on a large baking tray and bake according to Alexia package instructions (25-30 minutes) until sweet potato fries are golden brown and crispy and vegetables are roasted. Flip a few times while cooking.
To make the Masala Ketchup Eggs:
Step 1
Add garam masala to a hot non-stick pan lined with oil. Then add ketchup and mix together. Crack an egg into the spiced ketchup and sprinkle with a pinch of salt if desired.
Step 2
Cook on low-medium heat (covered so the ketchup doesn't burn or dry out) until the yolk is to desired temperature.
To make the Lime Crema:
Step 1
Mix all ingredients together in a bowl or mason jar and season with salt (about 1/4 teaspoon).
Step 2
Serve immediately with hash and eggs.
