Creamy Mashed Potatoes with Homestyle Gravy

What’s the holidays without mashed potatoes?! If you are looking for a light, low calorie mashed potato recipe, this is not it! When it comes to holiday mashed potatoes, our philosophy is go big (with butter!) or go home. As for the mashing weapon of choice, use a ricer. It will make your potatoes lighter and fluffier. Mashing by hand can lead to gummy mashed potatoes, and no amount of butter can fix that!

For the Creamy Mashed Potatoes

ingredients

  • 3 pounds Yukon Gold potatoes, quartered
  • Kosher salt, as needed
  • 1 stick unsalted butter
  • 1 cup heavy cream
  • 1 shallot, peeled and halved
  • Handful fresh sage
  • 1/2 cup sour cream
  • Black peppercorns, freshly ground, to taste

To Make the Creamy Mashed Potatoes

Method

  • Step 1

    Add potatoes to large stock pot and cover with cold water by 1 inch. Add a generous pinch of salt and place the pot over high heat and bring to a boil. Reduce heat to a simmer and cook for about 16-18 minutes, or until potatoes are fork tender.

  • Step 2

    While potatoes cook, simmer butter, cream, shallot and sage over low heat.

  • Step 3

    When potatoes are cooked, drain and add back to pot. Cook over medium heat for about 1 minute, shaking the pan occasionally, to cook off any residual moisture.

  • Step 4

    Rice the potatoes into a large bowl (the skins will remain behind in the ricer), then whip in the melted butter and cream mixture (remove and discard the shallot and sage) until smooth and creamy.

  • Step 5

    Season to taste with kosher salt and pepper and serve.

For the Homestyle Gravy

ingredients

  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 1 cup pan drippings, (can be turkey, chicken, or beef)
  • 2-3 cups stock, * (see note)
  • Kosher salt
  • Black peppercorns, freshly ground, to taste

To Make the Homestyle Gravy

Method

  • Step 1

    Add butter to a large wide skillet and melt over medium heat. Once melted, add flour and cook for about 3-4 minutes, or until a golden blond roux develops.

  • Step 2

    Add reserved pan drippings, whisking until smooth. Cook for 2 minutes, or until bubbling.

  • Step 3

    Slowly add in the stock, vigorously whisking as you go. Once stock has been added, cook for about 8 minutes or until you reach the desired consistency.

  • Step 4

    Taste, adding salt and pepper if needed. *Note: If you like a thin gravy, use three cups of stock, if you prefer a thicker sauce, use only two.
