ingredients

  • 3 - 5 pounds potatoes (800 grams)
  • 2 tablespoons olive oil
  • 2 tablespoons dairy-free buttery spread, melted
  • 1 teaspoon coarse sea salt flakes
  • Ground black pepper, to taste
  • 1 tablespoon spiced bread crumbs

Method

  • Step 1

    Preheat the oven to 400℉ and grease a large baking dish with cooking spray or oil.

  • Step 2

    Wash and dry potatoes. Make thin slices in each potato, only slicing about 3/4 of the way through, leaving the bottom of the potato intact. Place the potatoes into the prepared pan.

  • Step 3

    Mix the oil and melted butter together. Brush half of the butter-oil mixture over the potatoes. Season with salt and pepper.

  • Step 4

    Roast the potatoes in the oven for 30 minutes, then remove the pan from the oven and brush the potatoes with the remaining butter-oil mixture. Make sure the oil gets brushed between the sliced potatoes too. Bake for another 15-20 minutes or until the potatoes are golden and crispy.
