Mini Lime Cakes with Cashew Cookie Crust

"I’m so excited to be teaming up with LÄRABAR® and Feedfeed to encourage you to find a “New Year, New You” for 2021! I’m bringing you a recipe using Cashew Cookie LÄRABAR® Bars in an unexpected way. For this recipe, I used Cashew Cookie LÄRABAR® Bars as the crust of these delicious no-bake Mini Lime Cakes. I used only 7 ingredients, all of which I found at Whole Foods.   • 4 Cashew Cookie LÄRABAR® Bars
  • 1 cup raw cashews, soaked overnight, then drained
  • 3/4 cup coconut cream
  • 1/2 cup raw agave nectar
  • 1/2 cup fresh lime juice
  • 1/4 cup coconut oil, melted
  • 1 tablespoon lime zest
  • 2 teaspoon vanilla extract
  • plant-based whipped topping, as needed


  • Step 1

    Using two Cashew Cookie LÄRABAR® Bars for each pan, press the bars into the bottom of two 4-inch mini springform pans. Set aside.

  • Step 2

    Add all filling ingredients to a blender and blend on high until creamy and smooth.

  • Step 3

    Pour the mixture on top of crusts.

  • Step 4

    Freeze for 2-4 hours or until firm. Remove from the freezer for 10-15 minutes to thaw before serving.

  • Step 5

    Top with whipped topping and garnish with lime slices and lime zest.
