makes 4 sandwiches
8 slices whole grain bread
2 avocados, sliced
4 carrot, shaved into ribbons
2 small cucumbers, thinly sliced
4 small tomatoes, thinly sliced
1/2 cup beet sauerkraut or chopped pickled beets
Layer all of the toppings between the two slices of bread and enjoy!
