The loaf is incredibly moist, has the most tender crumb and almost melts in your mouth with a burst of freshness from the blueberries!????"

ingredients

  • 1/2 cup butter, softened
  • 1/2 cup cream cheese, softened
  • 3/4 cup caster sugar
  • 1 lemon, zested
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1 cup fresh or frozen blueberries

Method

  • Step 1

    Preheat oven to 350ºF (180ºC). Grease a a prepared 4x8 inch loaf pan.

  • Step 2

    In a mixing bowl, beat together the butter and cream cheese until creamy.

  • Step 3

    Add the caster sugar and lemon zest and beat until pale and fluffy. Gradually whisk in the eggs and vanilla.

  • Step 4

    In a separate bowl, sift together the flour, baking powder, and baking soda. Add the berries and mix gently to coat. Fold into the wet mixture.

  • Step 5

    Transfer batter into a prepared 4X8” loaf pan and bake for 35-40 minutes or until a skewer inserted into the center comes out clean.
