Mushroom Risotto

  • 2 cups mushrooms, chopped
  • 1/2 cup olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, chopped
  • 1 1/2 cups arborio rice
  • Salt, to taste
  • Black pepper, to taste
  • 1 quart vegetable stock
  • Parsley, for garnish


  • Step 1

    Heat about 1 tablespoon olive oil over medium heat. Sauté the mushrooms until softened. Remove from pan and set aside.

  • Step 2

    Add the remaining olive oil to pan. Cook the onion, garlic, arborio rice, salt and pepper for about 5 minutes, stirring occasionally. Carefully pour in the vegetable stock. Let cook until thick and creamy, while stirring. Garnish with parsley and adjust seasoning to taste.
