Spring is coming and what's better than a sweet and tangy mocktail to cheer to the season. Made with homemade elderflower syrup, fresh strawberries and mint- this quick and easy mocktail is perfect for any time of day.

ingredients

  • 3-4 fresh mint leaves
  • 3-4 sliced strawberries
  • 1 ounce lime juice
  • 1/2 ounce elderflower syrup
  • Sparkling water to top
  • Extra strawberries and fresh mint, optional

Method

  • Step 1

    Muddle mint, berries, and elderflower syrup together in a cocktail glass. Add the lime juice and top with sparkling water. Stir and garnish with strawberries and mint, if using.

To make elderflower syrup

ingredients

  • 1 elderflower tea bag
  • 1 cup boiling water
  • 1 cup granulated sugar

  • Step 1

    Brew elderflower tea in boiling water for about 15 minutes. Add granulated sugar and whisk until sugar is dissolved - if your tea has gotten too cold, heat it up a bit more to melt the sugar.
