Mushroom and Goat Cheese Toast

This quick and easy sourdough toast topped with creamy herbed goat cheese and savory mushrooms is perfect for a lazy weekend breakfast or brunch.

  • 2 slices sourdough bread, toasted
  • 1 tablespoons butter
  • 1/2 tablespoon avocado oil
  • 1/4 teaspoon salt
  • ground black pepper, to taste
  • 3 teaspoons fresh thyme leaves, divided
  • 2 cups mushrooms, sliced
  • 1/4 cup goat cheese spread
  • 1/4 teaspoon parsley, chopped
  • 1/4 teaspoon rosemary, chopped
  • oregano sprig, to garnish


  • Step 1

    In a medium skillet, heat avocado oil and add mushrooms. Season with salt and sauté until they release moisture and soften. Season with pepper and thyme.

  • Step 2

    Spread toasted sourdough with butter.

  • Step 3

    Mix remaining thyme and herbs with goat cheese. Spread buttered toast evenly with herbed goat cheese and top with mushrooms. Garnish with oregano sprig.
