ingredients
- 2 slices sourdough bread, toasted
- 1 tablespoons butter
- 1/2 tablespoon avocado oil
- 1/4 teaspoon salt
- ground black pepper, to taste
- 3 teaspoons fresh thyme leaves, divided
- 2 cups mushrooms, sliced
- 1/4 cup goat cheese spread
- 1/4 teaspoon parsley, chopped
- 1/4 teaspoon rosemary, chopped
- oregano sprig, to garnish
Method
Step 1
In a medium skillet, heat avocado oil and add mushrooms. Season with salt and sauté until they release moisture and soften. Season with pepper and thyme.
Step 2
Spread toasted sourdough with butter.
Step 3
Mix remaining thyme and herbs with goat cheese. Spread buttered toast evenly with herbed goat cheese and top with mushrooms. Garnish with oregano sprig.
