Tacos
ingredients
- 16 peeled shrimp
- 8 tortillas
- 1 clove garlic, finely chopped
- 1 teaspoon paprika, sweet
- 1 cup red cabbage, sliced
- 1/2 cup cilantro, leaves, torn
- 3 tablespoons olive oil
- Salt, as needed
- Pepper, as needed
Tacos
Method
Step 1
In a medium bowl combine olive oil, garlic, paprika and salt, add the shrimp to the marinade. Set aside.
Step 2
Place the tortillas in a hot pan until each side is golden brown. Wrap in a kitchen towel to keep warm.
Step 3
Cook the shrimp in a medium skillet until bright pink, 2-3 minutes. Set aside.
Step 4
Place red cabbage, spring onion, guacamole, prawns, and cilantro leaves in tortilla. Drizzle with the harissa sauce and serve with lime wedges.
Harissa Sauce
ingredients
- 1 teaspoon harissa
- 1/4 cup yogurt
- 1 lime, juiced
- Salt, as needed
- Pepper, as needed
Harissa "mayo"
Step 1
Combine harissa with yogurt, lime juice, salt and pepper.
Guacamole
ingredients
- 2 avocado, ripe
- 1/2 lime, juiced
- 1 tablespoon scallions, sliced
- 1 tablespoon cilantro
- 1 pinch salt
- 1 pinch pepper
Guacamole
Step 1
Mash avocados, lime juice, cilantro, scallions and a pinch of salt and pepper.
