ingredients
For the Base
- 1/2 cup honey
- 2 tablespoons coconut oil
- 1 pinch salt
- 1 cup sprouted buckwheat
- 1 cup gluten free oats
- 1 cup chopped nuts
- 1/2 cup pumpkin seeds
- 1/2 cup flax meal
- 1/4 cup sesame seeds
Method
To Make the Base
Step 1
Preheat the oven to 350ºF. In a small saucepan, combine the honey, coconut oil, and salt. Heat until the coconut oil melts and the mixture starts to bubble.
Step 2
Combine the remaining ingredients in a large bowl. Pour honey mixture into the bowl, and mix until the nuts and seeds have absorbed the liquid and begin to clump together.
Step 3
Press the mixture into a 9 x13-inch baking dish, using your hands to press into a flat, even base. Bake for 10-12 minutes. Let cool.

For the Topping
- 7 ounces dark chocolate
- 2 tablespoons coconut oil
- 2 tablespoons chopped nuts
- 2 tablespoons goji berries
To Make the Topping
Step 1
Melt chocolate and coconut oil together in the microwave or a small pot. Spread evenly over the cooled base and sprinkle on the berries and nuts. Refrigerate for a couple of hours before cutting into bars.
