Soaking Syrup:

  • 2 tablespoons granulated sugar
  • 3 tablespoons water
  • 2 tablespoons fresh lemon juice

For the lemon muffin batter:

  • 3 large eggs
  • 1/2 cup granulated sugar
  • 2 tablespoons honey
  • 1/2 cup mascarpone cheese
  • Zest of juice of 1 lemon
  • Zest and juice of 1 lime
  • 1/3 cup grapeseed oil
  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder

To make the Soaking Syrup:

Method

  • Step 1

    In a small saucepan, combine the granulated sugar, water, and lemon juice. Bring to a boil and stir until the sugar is dissolved. Set aside until ready to use.

To make the Muffin Batter:

  • Step 1

    In a mixing bowl, whisk together the eggs, granulated sugar, and honey until well combined.

  • Step 2

    Add the mascarpone cheese and mix until smooth.

  • Step 3

    Pour in the lemon juice, lime juice, and grapeseed oil, mixing until fully incorporated.

    Sift in the flour and baking powder, along with the lemon and lime zest. Stir until just combined.

    Preheat the oven to 350°F.

    Pour the batter into muffin tins, filling each cup about 2/3 full.

    Bake for 25 minutes or until golden brown and a toothpick inserted into the center comes out clean.
