ingredients
- For the Chicken:
- 1 tablespoon extra virgin olive oil
- juice of one lemon
- 1 garlic clove, minced
- 1 teaspoon kosher salt
- 1/2 teaspoon paprika
- Freshly ground black pepper
- 5 boneless skinless chicken thighs
- For the Tzatziki Dressing:
- 1 English cucumber, seeded and grated
- 1 cup plain yogurt
- Juice of 1 lemon
- 2 tablespoon dill, chopped
- 1 garlic clove, minced
- For the Salad:
- 1 head romaine lettuce, chopped
- 1 red onion, sliced
- 2 cups cherry tomatoes, halved
- 1 English cucumber, chopped
- 2 pitas (GF if needed)
- 1 lemon, cut into wedges, for serving
Method
Step 1
To make the chicken, in a bowl, toss together the olive oil, lemon juice, garlic, salt, paprika, ground black pepper, and chicken thighs. Place in the refrigerator for 30 minutes while you prep the rest of the salad.
Step 2
Next, to make the Tzatziki dressing.Add grated cucumber to a tea towel and wring out. Then, mix the grated cucumber with yogurt, lemon juice, dill, garlic, and salt. Set aside.
Step 3
Grill the pitas, then cut into wedges and place onto a platter along with the lettuce, onion, tomatoes, and cucumber.
Step 4
Heat a large frying pan over medium-high heat and cook chicken for 8-10 minutes, flipping halfway through the cooking time. Remove from the pan and let the chicken sit for a few minutes and then slice and place onto the salad platter.
Step 5
Serve with lemon slices and the homemade Tzatziki dressing.
