These egg bites are perfect for meal prep, full of veggies and are an all-round tasty snack/lunch you can pack on the go. Here’s what you need:

ingredients

  • 6 eggs
  • 2 heaping tablespoons Greek yogurt
  • 5 pieces shortcut bacon
  • 2 spring onions
  • 1 small zucchini, grated
  • 1 handfull baby spinach
  • 1/2 block of feta
  • Salt
  • Pepper

Method

  • Step 1

    Whisk the eggs and Greek yogurt until lump free.

  • Step 2

    Add the remaining ingredients, stir to combine and divide between muffin cases.

  • Step 3

    Bake in the oven 8-10 mins on 350F (if making mini’s) or about 20-23 mins for normal size muffins.

  • Step 4

    Store in an airtight container and enjoy throughout the week!
