I’m including these festive cereal bars in addition to my usual cookies. These bars have sweet and crunchy cereal mixed with bits of crushed peppermint candies and chunks of dark chocolate. The top of the bars are layered with white chocolate, dark chocolate, and more crushed peppermint! THEY'RE SO GOOD. This is an easy, no bake recipe that you can easily double, triple, or quadruple to fit your gifting needs. I used If You Care parchment baking paper to line the baking pan. No need to butter the pan! Plus the parchment makes it super easy to unmold the assembled cereal bars. Since I cook and bake daily, I try to limit the amount of waste I produce. I'm super conscious about the ingredients and products I use. I'm a big fan of If You Care’s line of products. Their parchment is unbleached and chlorine-free. Most importantly, If You Care’s products are intentionally crafted to have the least environmental impact with the lightest carbon footprint possible. Recipe

For the Cereal Bars:

  • 6 tablespoons (85 grams) unsalted butter
  • 1 (10 ounce) package mini marshmallows
  • 1/ 4 teaspoon kosher salt
  • 5 cups (140 grams) crispy rice cereal
  • 3 tablespoons (40 grams) crushed peppermint candy
  • 1/ 2 cup (85 grams) dark chocolate chunks

For the Topping:

  • 1/ 2 cup (85 grams) white chocolate, chips or chopped
  • 1/ 2 cup (85 grams) dark chocolate chunks
  • 3 tablespoons (40 grams) crushed peppermint candy

Method

  • Step 1

    For the cereal bars: Use two sheets of If You Care Parchment Paper to line a 9-inch square baking pan. Allow excess parchment to hang over the rim of the baking pan. Set aside.

  • Step 2

    Melt butter over medium heat in a large sauce pot. Add marshmallows and salt. Stir to combine until marshmallows are completely melted. Remove from heat.

  • Step 3

    Add in cereal. Gently fold to combine until the cereal is thoroughly coated with marshmallow. Fold in peppermint candy until distributed.

  • Step 4

    Transfer ⅓ of cereal mixture to the prepared baking pan. Use a spatula to press mixture into an even layer. Sprinkle half of the dark chocolate over the mixture. Top with another ⅓ of cereal. Press into an even layer. Sprinkle the remaining half of dark chocolate over the mixture. Finish with remaining ⅓ of cereal. Press into an even layer. Use a sheet of parchment paper to ensure mixture is level and flat on top. Set aside and cool to room temperature.

  • Step 5

    For the topping: Gently melt white chocolate over a bain-marie until smooth. Alternatively, heat white chocolate in the microwave for 15 second intervals at half power. Stir between intervals. Heat until white chocolate is smooth.

  • Step 6

    Spread white chocolate over marshmallow cereal treats. Allow white chocolate to set.

  • Step 7

    Gently melt dark chocolate over a bain-marie until smooth. Alternatively, heat dark chocolate in the microwave for 20 second intervals at half power. Stir between intervals. Heat until dark chocolate is smooth.

  • Step 8

    Spread dark chocolate over set white chocolate. Immediately sprinkle peppermint candy on top. Allow chocolate to set.

  • Step 9

    Unmold fully assembled marshmallow cereal by lifting from excess parchment paper overhang. Place on a cutting board. Slice into 9 equal squares, or desired serving size.
