For the Cereal Bars:
ingredients
- 6 tablespoons (85 grams) unsalted butter
- 1 (10 ounce) package mini marshmallows
- 1/ 4 teaspoon kosher salt
- 5 cups (140 grams) crispy rice cereal
- 3 tablespoons (40 grams) crushed peppermint candy
- 1/ 2 cup (85 grams) dark chocolate chunks
For the Topping:

- 1/ 2 cup (85 grams) white chocolate, chips or chopped
- 1/ 2 cup (85 grams) dark chocolate chunks
- 3 tablespoons (40 grams) crushed peppermint candy
Method
Step 1
For the cereal bars: Use two sheets of If You Care Parchment Paper to line a 9-inch square baking pan. Allow excess parchment to hang over the rim of the baking pan. Set aside.
Step 2
Melt butter over medium heat in a large sauce pot. Add marshmallows and salt. Stir to combine until marshmallows are completely melted. Remove from heat.
Step 3
Add in cereal. Gently fold to combine until the cereal is thoroughly coated with marshmallow. Fold in peppermint candy until distributed.
Step 4
Transfer ⅓ of cereal mixture to the prepared baking pan. Use a spatula to press mixture into an even layer. Sprinkle half of the dark chocolate over the mixture. Top with another ⅓ of cereal. Press into an even layer. Sprinkle the remaining half of dark chocolate over the mixture. Finish with remaining ⅓ of cereal. Press into an even layer. Use a sheet of parchment paper to ensure mixture is level and flat on top. Set aside and cool to room temperature.
Step 5
For the topping: Gently melt white chocolate over a bain-marie until smooth. Alternatively, heat white chocolate in the microwave for 15 second intervals at half power. Stir between intervals. Heat until white chocolate is smooth.
Step 6
Spread white chocolate over marshmallow cereal treats. Allow white chocolate to set.
Step 7
Gently melt dark chocolate over a bain-marie until smooth. Alternatively, heat dark chocolate in the microwave for 20 second intervals at half power. Stir between intervals. Heat until dark chocolate is smooth.
Step 8
Spread dark chocolate over set white chocolate. Immediately sprinkle peppermint candy on top. Allow chocolate to set.
Step 9
Unmold fully assembled marshmallow cereal by lifting from excess parchment paper overhang. Place on a cutting board. Slice into 9 equal squares, or desired serving size.
