Coconut milk, coconut yogurt, frozen avocado, spinach or kale, and matcha powder are blended to create a beautiful verdant smoothie for a little pick me up. The sweet coconut flavor goes perfectly with the matcha, while the frozen avocado adds lots of fiber and richness to this dairy-free smoothie. This can be layered for an ombre look.

ingredients

  • 1/2 cup plus 1-2 tablespoons coconut milk
  • 1 packed cup raw spinach or kale
  • 1 cup ice
  • 1 lime, juiced
  • 2 tablespoons flax seeds or meal
  • 1/2 avocado, diced and frozen (about ⅔ cup)
  • 1 1/2 teaspoons matcha powder
  • 1 cup dairy-free vanilla coconut yogurt, divided
  • 2 teaspoons agave nectar or honey (optional)

Method

  • Step 1

    Add coconut milk, spinach or kale, ice, lime juice, flax meal, frozen avocado, matcha powder, about 1 tablespoon coconut yogurt, and agave nectar, if using, to the Nutribullet Blender and blend on high speed until very smooth and creamy.

  • Step 2

    Spoon about ⅓ of the mixture into a chilled glass.

  • Step 3

    Add 3 more tablespoons of coconut yogurt to blender and blend again to create a lighter green color, then spoon half the mixture into glass over the first layer.

  • Step 4

    Add remaining yogurt to blender and blend just until combined to create the lightest green color. Spoon remaining mixture into glass over the middle layer serve immediately.
