This delicious syrup is a spin on my lemon-honey syrup! We got so many requests to make a vegan version that we just had to try it out with limes and agave. Use the syrup as the base for a citrusy cocktail or sweeten up a batch of popsicles. I like to use light agave syrup here because it has a more subtle flavor than amber/dark agave, but feel free to use what you have.

ingredients

  • 10 limes, thinly sliced
  • 24 ounces light agave nectar

Method

  • Step 1

    Pour a few tablespoons of agave into a clean, 1-quart glass jar. Layer some lime slices over the agave, overlapping them to the edge of the jar, then pour more agave overtop. Repeat with the remaining lime slices and agave until jar is full, topping off with a layer of agave. Close jar tightly and refrigerate for at least 6 hours (preferably overnight) to coax out lime juice, inverting the jar periodically in the first few hours to make sure syrup is combined. Lasts for up to two weeks in the fridge.
