Vegan Latkes (Potato Pancakes)
Makes 16 medium pancakes
Ingredients
4 lbs russet potatoes, divided (peeled and halved)
2 small onions, peeled and spiralized (or use grater)
1/2 cup oat flour (I grind my own from rolled oats in a Vitamix blender)
3 tbsp flax + 6 tbsp water mixed well and set aside for 5 minutes to gel
1 tbsp olive oil
Oil for frying
Salt for seasoning
*if you don't have a spiralizer, a grater will do just fine instead
Directions
Bring pot of water to boil. Add 4 medium potatoes peeled and halved (about 2lbs) to water and boil until very tender, about 15-20 minutes. When tender, drain. Add 1 tbsp oil/vegan butter and sea salt. Mash with a fork or potato ricer.
Use spiralizer and spiral the other 4 medium potatoes (about 2lbs) + the onions.
Make oat flour: Add 1/2 cup rolled oats to a blender or food processor and pulse/grind into flour.
Make flax "egg": Mix 3 tbsp ground flax meal + 6 tbsp water well and set aside for 5 minutes to gel.
Combine spiralized potatoes + onions, flour, mashed potato, flax egg in a large bowl. Season with sea salt. Use your hands and incorporate ingredients evenly.
Heat oil in a non-stick skillet (about 2 tbsp per batch). Make potato balls from the batter (about 1/4 cup) and flatten in your palm before adding to the hot skillet. Fry pancakes about 6 minutes per side.
Place finished potato pancakes on a paper towel to absorb extra oil.
Serve hot or cold with applesauce.
Spiced Apple Dipping Sauce
Ingredients
16 medium apples, peeled and quartered
1/4 cup cane sugar
1/2 cup water
4 tsp Vitamix winter spice mix (combo of crystalized ginger, ground cardamom, kosher salt, pink peppercorns, clove, dried orange peel brown sugar)
Directions
Place all ingredients in pressure cooker and set to manual for 8 minutes. Allow to depressurize naturally. Allow to cool. Transfer to a Vitamix blender to process until smooth.
For stove top
Place all ingredients in a large pot and cook over medium heat for 20 minutes. Test to see if the apples are mushy and very soft. Great, they're ready! Just make sure to watch the liquid level to make sure nothing burns. Then, transfer to blender when cool and blend until smooth.
