- 2 cups white whole wheat flour
- 1 teaspoon baking powder
- 1/ 4 teaspoon fine sea salt
- 1 cup frozen mango pulp, defrosted
- 1 1/ 2 cups sugar
- 1/ 2 cup whole milk
- 1/ 2 cup canola oil
- 1 fresh mango, pit removed, flesh scooped out, and cut into cubes
Preheat oven to 350F. Butter or spray an 8x8 inch baking pan.
In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
In another medium bowl, whisk together mango pulp and sugar until smooth. Whisk in milk and oil, continue to whisk until mixture is emulsified.
Using a rubber spatula, fold in flour mixture followed by mango until fully incorporated.
Pour batter into prepared baking pan and bake for 1 hour.
Let cool completely before serving.
