  • 3 garlic cloves, minced
  • 8 sundried tomatoes, chopped
  • 1 tablespoon dried oregano
  • 2 tablespoons tomato paste
  • 2 cans chickpeas, drained and rinsed
  • 1 cup vegetable broth or water
  • 1 cup coconut milk
  • Handful of fresh spinach
  • Fresh chopped chives, for garnish
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Method

  • Step 1

    Heat olive oil in a pan over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant.
