Petite Vanilla Bean Cupcakes with Fresh Fruit


1 1/4 c flour

1/4 c almond flour

1 1/2 tsp baking powder

1/2 tsp fine sea salt

1 c sugar

1 stick butter, room temp

2 large eggs, room temp

1/2 c whole milk, room temp

1 tsp pure vanilla extract

1 seeded vanilla bean (optional)


Position rack in the center; preheat to 350 degrees. Line a 24-cup mini muffin pan. In a medium bowl, whisk together the flours, baking powder & salt. In a large bowl, using a mixer, beat the sugar & butter until just combined. Add eggs, milk, vanilla & vanilla bean seeds (optional). Beat until smooth. Add dry ingredients & mix until blended. Spoon batter into mini muffin pan & bake for 15-20 minutes. Allow to cool. Frost with vanilla or buttercream frosting. Top with lots of seasonal fruit.
